Variation ideas

  • Try mixing it up with the vegetables. Green beans are yummy with the chicken. This would also be a great way to make this a one pot meal.
  • Use chicken thighs instead of chicken breasts. You can even mix both together.
  • Try using red potatoes. These are delicious in this one pot meal.
  • Add a second can of cream of chicken soup. You can add an extra can if you like even more sauce.
  • Add chicken broth. The consistency can be thinned by adding chicken broth.
  • Use cauliflower instead of potatoes. If you are trying to reduce carbs, use cauliflower as a substitution for the potatoes. The rich gravy makes even cauliflower tasty.
  • Omit the potatoes. Skip the potatoes in the crock pot and serve this recipe over mashed potatoes, egg noodles or rice.
  • Cream Soup. More ideas include: cream of mushroom and cream of celery. Another idea is to mix two different types of soup in this recipe.

How to store

Put leftovers inside an airtight container. Place in the fridge up to 5 days.

How to reheat

You can reheat individual servings in the microwave for 60 seconds or until heated through. If the sauce separates, just whisk it until creamy.

This is great for lunch later in the week. We all fight over who gets the leftovers. It really is that delicious.

Make this a freezer meal.

You can make this ahead of time so all you have to do is toss and go in the crock pot.

Put the chicken in a freezer bag. Then mix together the sauce and pour in the bag over the chicken.

Freeze until ready to cook. Do not add the potatoes and carrots until you are ready to put in the slow cooker.

Cook as normal and enjoy. This is a great way to cut down on a portion of the prep time.

I like to cook one batch and freeze another. It really is not any more work since you have all of the ingredients out. Plus, you will have another easy meal for later.

FAQs

Does chicken need to be covered in liquid in crockpot? ›

When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full. Follow the manufacturer's recipes and directions for best results.

Is it better to cook chicken on high or low in crockpot? ›

Always cook your boneless skinless chicken breasts on LOW for the best results. I do not recommend cooking boneless chicken breast on HIGH, as it will become very dry and tough, even if you check it early. On high, the chicken turns out drier; I consistently have the best results with low.

A general rule of thumb from Luis Sanchez, senior category manager for the appliance manufacturer Breville: To go from "High" to "Low" (or vice versa), multiply (or divide) the original time by 1.5 to 2.5 hours. And as with the cooking times for specific ingredients, these times are approximate.

Can you cook chicken on low for 4 hours? ›

Cover and cook on High for 2 ½-4 hours or on Low for 4-6 hours. Chicken breast fillets can be placed directly into the slow cooker, but to create richer, deeper flavours and better visual appeal, first sear the chicken breast in a hot pan over medium-high heat on each side for 1-2 minutes.

Does chicken get more tender the longer you slow cook it? ›

That is why tough meats become “fork tender” in the slow cooker. Chicken breasts have very little connective tissue; that means they can be cooked quickly because the long cooking time needed to soften connective tissue isn't necessary. They also have little fat, which means they can become dry if cooked too long.

How long is too long for chicken in crockpot? ›

You certainly can, the meat will simply fall to bits, which might be desirable for some recipes like “Chicken and Dumplings” which will take 8–12 hours on “Low” setting. As long as the temperature remains above 140 F you can leave your chicken in the cooker all day but try to avoid more than 12 hours

Why do chicken breasts dry out in slow cooker? ›

Chicken breasts are very low in fat and will be dry unless you cook them in a way that keeps them moist. They're a very unforgiving ingredient. You need to stuff them with something (as in a kiev or cordon bleu), poach them, fry them so they will absorb some fat, anything that isn't just grilling or baking them.

Can chicken overcook in slow cooker? ›

Can you overcook chicken in the slow cooker? Yes, it is possible! If the meat is cooked too long it could end up dry and not juicy and tender. The recommended times in my recipe are ideal for juicy results, but if you use less chicken than the recipe calls for I would recommend checking it sooner.

How do you fix tough chicken? ›

Moisture: Introduce moisture to the chicken to help soften it. You can do this by marinating the cooked chicken in a sauce or broth for a while. This can help rehydrate the meat and add some flavor. Just be careful not to over-marinate, as the chicken could become mushy.

A slow cooker does not need any liquid added at the beginning of the cooking process, because it will generate steam, which will become liquid in the bowl. For recipes that use liquid, and have not been written specifically for a slow cooker it make sense to reduce the amount of liquid by half.

Does roast in crockpot need to be covered in liquid? ›

Some recipes call for liquid, some do not. It mainly comes down to the type of meat you use. Cuts like chuck roast will release more fat and moisture than leaner cuts, so they don't need any water. In addition, the slow cooker itself creates some moisture, which helps keep the meat juicy.
