Ingredients for bolognese potatoes with cheese

For the potatoes: It's essential to choose firm rather than floury potatoes. Firm potatoes have a denser texture and hold up well to cooking, making them ideal for this recipe. They retain their shape and offer a pleasant mouthfeel when combined with the Bolognese sauce and cheese au gratin.

And for the spices, feel free to use whatever spices you like - remember, cooking isn't an exact science, so have fun with it!

For the bolognese: Beef stock is optional. We like it in this recipe because it adds an extra depth of flavor to the sauce. Adding beef broth to Bolognese can give the sauce a subtly complex note and enhance the flavors of the meat and vegetables.

However, if you don't have beef broth or prefer a simpler version, salt may be all you need for a good Bolognese. Be sure to taste the sauce as it cooks, and add salt according to your personal preferences.

What can be substituted for the meat?

Veggie? Here's a brief description of the best alternatives to meat for this recipe:

  1. Textured soy protein: Textured soy proteins, also known as soy "steak", are dehydrated soy pieces. They can be rehydrated and used in dishes such as sauces, chili, stews or tacos.
  2. Tofu: Tofu is made from coagulated soy milk. It is versatile and can be used in many recipes. It absorbs flavors well and can be marinated, grilled, sautéed or used as a base for dumplings or vegetarian patties.
  3. Tempeh: Tempeh is an Indonesian food made from fermented soybeans. It has a firm texture and a nutty flavor. It can be marinated, grilled, sautéed or crumbled for use in vegetarian burgers, salads or stir-fries.
  4. Seitan: Seitan is a wheat gluten product. It has a texture similar to meat and can be marinated, roasted, grilled or used in recipes such as stews, stir-fries or vegetarian kebabs.

Here are a few tips to make this recipe a success

Potato cubes: To ensure even cooking, try to cut the potatoes into uniform-sized cubes. This will help them cook at the same rate and prevent some from becoming overcooked while others remain undercooked.

Season carefully: Taste your Bolognese sauce regularly throughout the cooking process and adjust the seasonings to suit your taste. Add fresh herbs such as basil or oregano to enhance the flavors. Be careful not to over-salt the sauce, especially if you're using beef stock, which may already contain salt. Add salt gradually to avoid over-salting.

Use slow cooking: Bolognese is a sauce that benefits from slow cooking over low heat. This allows the flavors to develop and the ingredients to absorb each other.

Cooking time (potatoes): keep an eye on the potatoes while they're in the oven. Cooking times may vary depending on the size of the cubes. You can check for doneness from 20 minutes and adjust the cooking time accordingly. The potatoes are ready when golden and crisp.
