I started a little late this year to make Christmas treats. I know that I would be a better blogger if I start preparing for Christmas back in July when far more prepared folks do. But Blogging it’s not my full-time job… I’m a teacher and sometimes it’s hard for me getting time for my blog.

Colorful Grinch Brownies are a special treat for all! The most special is that you can make these brownies with the kids help. How to make Grinch Brownies

  1. Preheat oven to 175°C | 350°F.
Lightly grease an 8×12-inch baking pan* with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  2. Microwave butter with chopped chocolate in a medium-sized bowl. Whisk every 30 seconds to combine.
  3. In a bowl beat the eggs with two sugars (light and brown) and vanilla extract for 5 minutes.
  4. Add the melted chocolate and butter into the egg mixture.
  5. Sift in flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  6. Pour batter into prepared pan.
  7. Bake for 25-30 minutes for just under-done brownies (fudgier texture) or until the center of the brownies no longer jiggles and is JUST set to the touch.
OR 35-40 minutes if you like your brownies well set and firm.
  8. After the brownies have cooled, prepare the mint ganache topping.
  9. In a heat-safe bowl or double boiler over simmering water, add white chocolate and heavy cream. Stir until the chocolate has fully melted.
  10. Remove from heat and stir in peppermint extract and green food coloring.
  11. Pour ganache over brownies and top immediately with chopped Oreos and red hot candies.
  12. Allow to set, for about one hour. Cut and enjoy.

NOTE: Brownies will continue baking and set in the hot pan out of the oven. If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
