Beef Stroganoff with Greek Yogurt - Recipe Diaries (1)

Beef stroganoff is a childhood favorite dish of mine. My Dad would always make it for us. I don't really remember having too many favorite childhood dishes besides this one and Chicken Cheese Hotdish. He would always use ground beef and often times I see this recipe with cubed beef and mushrooms.

The only time I will ever eat mushrooms is when they're cut up into really tiny pieces like they are in condensed cream of mushroom soup. Otherwise, then this recipe, this will be the only time you see a recipe that includes mushrooms on this site. I've tried to like mushrooms before but we just don't get along. It's a texture thing. That and black olives.

  • Lean ground beef - Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
  • Onion, chopped yellow or white
  • Cornstarch - Used to help thinking the gravy
  • Garlic powder - is made from dehydrated garlic cloves and like the chili powder above it gets pulverized into a powder or flour consistency.
  • Cream of mushroom soup (98% fat-free)
  • Uncookedegg noodles
  • Greek Yogurt or Light Sour Cream - is considered great for a variety of reasons. It is typically higher in protein and lower in sugar than regular yogurt, making it a good choice for those looking to maintain a balanced diet.

How do you add sour cream to stroganoff without curdling? ›

The secret here is to wait to add the sour cream until the very end, temper it with a bit of the hot broth and then add it to the pan just long enough to warm it, as boiling can cause it to curdle.

What can you use instead of dijon mustard in stroganoff? ›

Dijon Mustard: Instead of Dijon mustard, you could use whole-grain mustard, spicy mustard, or honey mustard. One way to thicken beef stroganoff is with flour or cornstarch. These are both common cooking ingredients that will help create an excellent thickening agent for beef stroganoff recipes.

Can you use Greek yogurt instead of sour cream? ›

Full-fat Greek yogurt will offer the closest approximation of sour cream's flavor and texture, and can be used as a one-to-one replacement for sour cream. If you'd like, you can stir some heavy cream into any percentage of Greek yogurt to give it a somewhat richer body and higher fat content.

What is a healthy alternative to sour cream? ›

Greek yogurt is one of the best swaps for sour cream that you can find. (Just be sure to look for plain Greek yogurt, not the flavored variety.) It has a similar creamy texture and that characteristic tang; plus, it's a healthy ingredient that'll add protein to your dish.

What can I add to stroganoff for more flavor? ›

Quartered mushrooms and a combination of pearl onions and shallots give the finished dish a more interesting texture and flavor.

How do you stop cream curdling in beef stroganoff? ›

How do you keep sour cream from curdling in beef stroganoff? Remove some of the liquid from your stroganoff and allow it to cool. In a small bowl, take several tablespoons of the sour cream (or however much you require) and then add a teaspoon of the cooled liquid from the stew.

Why has my beef stroganoff curdled? ›

Cooking at too high a heat is a common culprit behind curdling Stroganoff. Slow things down and above all, never allow the sauce to boil.

Why is my stroganoff gummy? ›

Why is my stroganoff gummy? Sauces typically become gummy because you added too much of the thickening agent, in this recipe's case flour. If this happens to you, my recommendation would be to thin the sauce out using water or broth and adjust seasonings as needed to compensate for the added volume of liquid.

What if I add too much liquid to my beef stroganoff? ›

Cornstarch is a reliable and widely used thickening agent, that works in sauces, gravies, and soups. Homemade sour cream requires just two ingredients: heavy cream and an acid, like freshly squeezed lemon juice or distilled white vinegar.
